Single Serve Chocolate Chip Cookie

I spent so much time trying to perfect a single serve chocolate chip cookies, and I finally did it!!! This technically makes two cookies, but it’s the closest I could get to a single serve! You can either make both cookies, or put the remaining dough in the refrigerator for the next day.

Here are some of my baking essentials:

Single Serve Chocolate Chip Cookie

Prep Time 5 minutes
Cook Time 14 minutes
Total Time 19 minutes

Ingredients
  

  • 3 Tbsp unsalted butter softened or melted & cooled
  • 2 Tbsp sugar
  • 3 Tbsp brown sugar
  • 1 egg yolk
  • 1/2 tsp vanilla
  • 1/4 tsp cornstarch
  • 3 Tbsp flour
  • 3 1/2 Tbsp cake flour *see below for how to make cake flour if you don't want to buy from store
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 2/3 cup chocolate chip I used a mix of dark, semi sweet & white
  • Flaky salt for topping optional

Method
 

Cookies
  1. Preheat oven to 350 F
  2. Mix butter and sugars until combined
  3. Add in egg yolk and vanilla; mix
  4. Add dry ingredients; mix until just combined
  5. Fold in chocolate chips
  6. Form dough into 2 large pucks
  7. Bake for 14 minutes
  8. Top with flaky salt (optional). Enjoy!
Make Your Own Cake Flour
  1. Whisk together 3/4 cup + 2Tbsp of flour and 2 Tbsp cornstarch
